Here's a simple one for those of you who are looking for a healthy snack.
- 4 bananas, sliced and frozen
- 1 cup blueberries
- 1/2 cup plain greek yogurt
- dash of almond milk (or milk of your choosing)
- small handful of mint leaves, roughly chopped
Blend the frozen bananas, yogurt and milk, adding a little more liquid if bananas are difficult to puree. Then blend in blueberries. Pour mixture into a freezer friendly dish and stir in mint leaves. If you're short on time or simply impatient you can eat it here - it's soft serve! I prefer to refreeze it, as it feels more like the ice cream I know and love.
Though the combination of blueberries and mint is my favorite, you can also play around with adding other spices and fruits. I sometimes simply add cinnamon and call it a day - delicious as well.
