I like to call this one Guacamole Quinoa Salad and it is wonderful because of its variety of textures as well as being packed with so many important nutrients. My favorite of these being protein, as it is the only thing that sticks with me and keeps me full. This salad is another good option for packed lunches or potlucks.
- 1 cup quinoa, cooked according to directions on box
- 1/2 cup canned chick peas
- 1 small tomato, diced
- 1 avocado, diced
- goat cheese
- 1 handful of cilantro, roughly chopped
- salt and pepper to taste
This salad is pretty easy to put together. Cook the quinoa in water according to the instructions on the box. I chose to add a little red pepper and cumin to the water it cooked in. This is optional but it gives it some added flavor. Then mix together all the ingredients, adding the avocado and goat cheese last as they tend to get smashed with too much mixing.
