Those pb cups got me going on all those childhood snacks that are probably better left out of our diets - for starters, the unnaturally orange yet deliciously addictive cheez-it. But wouldn't it be cool if our pantries were filled with homemade crackers instead? I certainly thought so. Besides, as we concluded with the pb cups, 'homemade' makes 'healthy' irrelevant and I can snack all I want regardless. At least, now, I know what goes into them.
- 1 1/2 cups flour
- 1 1/2 cups grated pecorino
- 1/2 cup butter
- 1/2 teaspoon salt
- 1/8 teaspoon red pepper or paprika
- freshly ground black pepper
- 3-4 tablespoons milk
In a standing mixer beat butter until smooth. Add flour, pecorino, salt, and peppers. Mix until combined. Slowly add liquid with mixer on until the dough begins to clump together. Pat into a disk and roll out on a floured surface. Once thin enough, slice the dough into squares and poke each cracker with a fork. Place pan in the oven at 350F for about 25 minutes or until lightly golden. Let cool on a rack and enjoy.
