As my family can attest, I have a small obsession with Trader Joe's peanut butter cups. I have been known to devour the whole box in a day landing me on the couch with a tummy ache but not an ounce of regret. The trouble is, because I go through them so quickly I often find the pantry lacking this beloved treat. In this predicament I decided to try making my own, this time with almond butter and flax seeds. Perhaps now, I can convince myself that these chocolates really are a healthy snack... maybe.
- 1/2 cup almond butter
- 1/4 cup powdered sugar
- 2 tablespoons flax seeds
- 1 bag chocolate chips (dark or milk)
Melt chocolate chips in a bowl in the microwave. Fill mini muffin tins about an 1/8 of an inch high with chocolate. Place tray in freezer. Meanwhile, mix almond butter, powdered sugar and flax. Shape into small, coin-like rounds. Remove tray from freezer and place an almond butter round at the center of each cup. There should be a bit of space on either side of the round for chocolate. Finish filling the cup with melted chocolate until the almond butter round is completely covered. Top with sea salt or flax seeds and freeze for 10 minutes. Remove and enjoy your "healthy snack."
